Recently, the Food Safety and Drug Administration of Uttar Pradesh took action and banned the sale of 12,800 kg of Khoya. Initial investigation has revealed signs of adulteration, after which samples have been sent for testing. During another action, the administration destroyed more than 760 quintals of khoya.

This is not a single case. News of adulterated khoya being found and action being taken against its sale is continuously coming to light from many parts of the country. Adulterated khoya is extremely harmful for health. Consuming it can cause problems like indigestion, stomach ache, acidity, and food poisoning.

In such a situation, it is very important to understand and identify the difference between adulterated and pure khoya. Food Safety and Standards Authority of India (FSSAI) has given some easy methods for this.

answer- To prepare adulterated khoya, things like starch, flour, synthetic milk, refined oil or vegetable ghee are often added to it. To increase profits, adulterators also add harmful substances like chemicals, urea or detergent used in soap. Adulterated khoya may appear similar to the original. But its consumption can prove to be extremely dangerous for health.

  • Digestive problems like stomach ache, indigestion, gas and diarrhea may occur.

answer- Palm oil (trans fat), urea, starch, detergent and harmful chemicals present in adulterated khoya increase bad cholesterol in the body. This can increase blood pressure and pressure on the heart. In the long run, this increases the risk of blockage in arteries and heart disease.

Complete method in detail

  • Pour milk into the pan and bring it to a boil on high flame.
  • After boiling, reduce the flame to medium.
  • Keep stirring the milk continuously. Scrape off the cream that settles at the edges and mix it back into the milk. This will make the khoya shiny.
  • As the water dries, the milk will thicken and look like rubber. During this time, reduce the flame a bit, so that it does not splatter and the mixture does not burn.
  • When the milk thickens completely and starts leaving the pan and starts gathering at one place, then understand that the khoya is ready.
  • Switch off the gas and take out the khoya in a vessel. After cooling it will become even harder and granular.
  • By keeping it in an airtight container, it can be kept safe for 4-5 days in the fridge and for a month in the freezer.

answer- If you suspect adulteration at a shop, first talk to the shopkeeper. If you do not get a satisfactory response, you can complain on FSSAI’s toll-free number 1800112100. You can also file a complaint on the official website.

Apart from this, information can also be given to the local police and food safety department of the district. Keep the sample of adulterated khoya and the purchase receipt with you. This will come in handy when needed.

answer- Strict action may be taken against those selling adulterated food. In India this offense is punishable under the Food Safety and Standards Act, 2006. If a person is caught selling adulterated or unsafe food, he will be punished with-

  • The license may be revoked or suspended.
  • The shop may be sealed.

  • Always buy khoya from a trusted and licensed shop.
  • Do not buy khoya that is very cheap or kept in the open on the roadside.

  • Strange odor or overly grainy texture may indicate adulteration.
  • While buying packed khoya, definitely check the manufacturing and expiry date.
  • Keep the purchase bill safely so that a complaint can be made if needed.

answer- Khoya is a perishable dairy product. In the summer season, it can spoil within a few hours at normal room temperature. If kept in an airtight container in the refrigerator, it can be kept safe for about 2–3 days.
